Spinach and Cheese Frittata

Frittatas are one of the eastiest and BEST way to use leftovers. You can throw everything but the kitchen sink into them!

I had some spinach to use up, so what better way than in a frittata!

Here is the recipe:
1 cup of chopped fresh spinach
1 teaspoon minced garlic
1/2 diced onion
4 strips of bacon, crumbled
1/2 cup shredded cheese
1/2 cup grated cheese
5 eggs

Preheat oven to 350 degrees. Sauté onion and garlic over medium heat for 2 minutes, and then add spinach. Cool another 2 minutes. Once cooked remove from cast iron skillet. Whick eggs together and add to skillet. Add spinach,onion and garlic mixture, bacon, and cheeses. Remove from heat and finish in the oven for 10 minutes.
