Blackberry Jam
9:45 AMFor this recipe I chose to use blackberries, but any fruit that you have will do, fresh or frozen. On the farm property we have blackberries that grow and I forgot I stashed these in the freezer from last season.
Since the blackberries were a bit tart I decided to add some stevia to sweeten it up a bit, but you can absolutely omit the sweetener if you would like.
Here is the recipe:
2 cups blackberries (fresh or frozen)
2 tsp stevia
1 tsp lemon juice
1/4 tsp xanthan gum
Cook blackberries and stevia on medium heat stirring frequently for 20 minutes. As this mixture cooks, mash the blackberries into desired consistency.
Remove from burner and mix in lemon juice and xanthan gum. Pour into glass mason jars, flip upside down, and let cool. Refrigerate once cooled.
