Andrea's Famous Meatballs

11:58 PM

Famous meatballs? What's so famous about them? The reason I labeled them famous is because every time I make them, they seem to disappear.

Normally I prepare these meatballs in a large batch so I can eat some now, and freeze most of them for later. This way when I am looking to whip up a quick meal, I can simply defrost these.

Here is the recipe:

1 pound ground pork
1 pound ground beef
2 eggs, beaten
1/2 cup parmesan cheese
1/2 cup Pecorino romano cheese
1 tsp oregano
1 tsp basil
1 tsp parsley
1/8 tsp garlic powder
1/8 tsp onion powder
1/8 tsp pepper
1/8 tsp salt

Preheat oven to 375 degrees. Add all ingredients together into a standing mixer. Mix until combined -- about two minutes. Do not overmix, this will make the meatballs tough! Form meatballs into 4oz balls and place onto a baking sheet. Bake for 25 to 30 minutes or until meatballs reach an internal temperature of 165 degrees.
